Fall-Inspired Apple Spice Coffee Cake

The scent of fall, fresh from the oven! This Apple Spice Coffee Cake delivers bold, cozy flavors perfect for chilly mornings or afternoon treats.

Ingredients:

Crumb Topping:

3/4 cup almond flour

1/3 cup coconut sugar

1 1/2 tsp ground cinnamon

1/4 cup ghee, cold and cut into pieces

 

Cake:

3 eggs room temp

1/4 cup applesauce unsweetened

1/4 cup organic coconut oil melted and cooled

1 tsp pure vanilla extract

2/3 cup coconut sugar

1 3/4 cups almond flour

1/4 cup tapioca flour

1/2 tsp baking soda

1/4 tsp salt

¼ tsp powdered ginger

¼ tsp allspice

1 tsp cinnamon

Pinch of nutmeg

Directions:

1.      1. Preheat oven to 350 degrees and line an 8x8” square pan with parchment paper.

Crumb topping:

2.      2. Add all ingredients to a bowl and combine until a coarse crumbly mixture forms. Place in the fridge while making the cake.

Cake:

3.      3. In a medium bowl, combine the almond flour, tapioca flour, baking soda, salt, ginger, allspice, cinnamon, and nutmeg.

4.      4. In a separate large bowl, whisk the eggs, apple sauce, coconut oil, coconut sugar, and vanilla until very smooth. Stir the dry ingredients into the wet using a spoon or spatula until batter is smooth.

5.      5. Pour batter into the prepared pan using a spatula (the batter should be on the thick side). Make sure to spread the batter evenly in the pan, then sprinkle the crumb topping on top.

6.      6. Bake in the preheated oven for 28-32 minutes. When in doubt, stick a toothpick into the center of the cake and if the toothpick comes out clean then the cake is done.

7.      7. Let the cake cool on a wire rack for around 20-30 minutes.
