Sugarless Sugar™ Caramel Corn

With natural sugar alternatives, you can have your caramel corn and eat it, too! We use low-glycemic Sugarless Sugar™ baking blend to create a low-sugar version of a seasonal favorite. Then we add almonds to make this a sweet-and-salty treat sure to please any trick-or-treater!

1/4 Cup Organic Popcorn

2 Tablespoons Organic Virgin Coconut Oil

1/2 Cup Roasted, Salted Almonds

1/2 Cup butter

1/2 teaspoon Simply Organic® Madagascar Pure Vanilla Extract

1/4 teaspoon Redmond Real Salt

1/4 teaspoon Frontier® Organic Ceylon Cinnamon

1/2 Cup Sugarless Sugar™



  1. Heat coconut oil on medium-high in a large skillet. Carefully place a few kernels of the popcorn in the oil and cover with a lid. Once they pop, add the rest of the popcorn and turn heat down to medium. Cover and shake skillet slightly back and forth until popcorn is completely popped.
  2. Empty into a bowl and add almonds. Set aside.
  3. Melt butter on medium-low heat, then add vanilla, salt and cinnamon.
  4. In a separate saucepan on medium-high heat, stir Sugarless Sugar™ until it melts (it will caramelize very quickly).
  5. When the caramelized Sugarless Sugar™ has turned light brown, add melted butter mixture.
  6. Stir together until the mixture forms a smooth, thick caramel. Remove from heat.
  7. Pour caramel over popcorn and almond mix, and gently toss to coat evenly. Careful-- the caramel will be very hot!
  8. Spread popcorn on a cookie sheet lined with parchment paper or a silicon baking mat. Allow to cool and harden for at least 30 minutes. Enjoy!
