Pecan Granola Parfait

Did you know that April is National Pecan Month? Though these nuts are delicious any time of year, we're going all out with a special pecan granola parfait! This isn't just your average granola, though. It derives superfood powers from a quinoa base combined with chewy oats. Enjoy layered with organic Greek yogurt and fresh berries-- or by itself!

Prep time: 15 minutes 

Bake time: 40 minutes

1 Q Cups™ Organic Quinoa

2 Tablespoons organic coconut sugar

1 Tablespoon cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon sea salt

1/4 Cup organic, amber agave nectar

1/2 teaspoon organic vanilla extract

1 Cup organic rolled oats

3/4 Cup raw & unsalted pecans

1/2 Cup fresh berries

1 Cup organic Greek yogurt


1. Preheat oven to 325 degrees and line baking sheet with parchment paper.

2. Add cinnamon, nutmeg, salt, and coconut sugar to Organic Q Cup.

3. Add 1/2 Cup boiling water to Q Cup. Stir and cover with lid. Set aside.

4. After 5 minutes, combine quinoa in a bowl with rolled oats, pecans, agave, and vanilla.

5. Evenly spread mixture on lined baking sheet. Bake for 25 minutes.

6. Remove from oven and let cool for at least 15 minutes.

7. Layer in a glass with yogurt and berries. Enjoy!
