Keto-Friendly French Toast Protein Bites

This recipe comes from Fruitful Yield Lombard's very own Sharyn Tondu! She is a wiz in the kitchen, especially with gluten-free, vegan, and low-carb ingredients (we love it when she brings her creations to work to share with us!). These keto-friendly french toast protein bites are small enough for snacking and sweet enough for dessert. Whip up a batch today and fuel your week-- if they last that long!

Bake time: 15-20 minutes

Servings: 36-48 bite-size balls


1/2 Cup Cashews, Roasted & Salted

1/2 Cup Cashews, Raw

3/4 Cup Pecans, Raw 

1/3 Cup Macadamia Nuts, Dry Roasted & Salted  

3 Tbsp Coconut Oil, Organic & Virgin

2 squirts BetterStevia® Liquid, Maple Flavor

2 scoops Ancient Nutrition Bone Broth Protein, Vanilla Flavor

3/4 Cup Almond Flour, Raw

2 eggs

1/2 teaspoon cinnamon

1/2 teaspoon baking powder


1. Preheat oven to 350 degrees and line a baking sheet with parchment paper.

2. In a food processor, combine raw and roasted cashews and pecans. Grind until fine.

3. Add 2 tablespoons of coconut oil. Process until a soft dough forms.

3. Add BetterStevia™ Maple Flavor, eggs, and 1 remaining tablespoon of coconut oil. Blend evenly.

5. In a separate bowl, combine Vanilla Bone Broth Protein Powder, almond flour, cinnamon and baking soda.

6. Slowly add mixture to food processor and blend until it forms a stiff dough.

7. Coarsely chop macadamia nuts and add to dough. Mix evenly to combine.

8. Roll into small balls and place on prepared baking sheet. Bake for 10-15 minutes or until set and slightly golden brown. Enjoy!


Protein bites will be oily-- but don't worry, it's the good kind of fat that fuels your keto lifestyle!

Make a vegetarian version by swapping eggs for egg substitute and bone broth protein for a plant-based protein.
