KETO Bomb Cookie Bites (Vegan, Dairy Free!)

Prep time: 35 minutes

Ingredients:

8 tablespoons Coconut Infusions, Butter - Ellyndale

1/3 cup Swerve (Erythritol Sweetner)

1/2 teaspoon vanilla extract

1/2 teaspoon salt

2 cups Almond Flour - NOW

2/3 cup stevia-sweetened Chocolate Chips - Lily's

Chocolate Drizzle Ingredients:

3 tablespoons stevia-sweetened Chocolate Chips - Lily's

1/2 teaspoon Coconut Infusions, Butter - Ellyndale

Directions:

1. Using a kitchen aid or hand mixer, beat Coconut Infusions, Butter until fluffy.

2. Add Swerve, vanilla, and salt to your mixer. Continue to mix.

3. Gradually add almond flour, then chocolate chips. (Add up to 3 tablespoons of extra almond flour if it's too gooey!)

4. Use a small cookie scoop, scoop dough balls onto plate. Immediately cover and freeze for 20 minutes.

5. For chocolate drizzle: add chocolate chips and Coconut Infusions, Butter to a mug. Microwave for 20 seconds. Take out and stir. Microwave for 10 more seconds. Stir again.

6. Get keto bites from the freezer, and drizzle with chocolate.

7. Eat 'em up right now, or store in your freezer!
