Green and good for all diets, it's gluten-free, dairy-free, and low-glycemic -- with options for vegans and nut-free folks too! Salad Ingredients:

1 Ellyndale Q Cup in Original Flavor

2-3 handfuls chopped kale

1/4 diced mango

2 stalks chopped celery

1/4 cup dried cranberries

a sprinkle of NOW Honey Roasted Pecans*

(*Nut-free folks can choose NOW Pumpkin Seeds or Sunflower Seeds instead.)

Dressing Ingredients:

2 teaspoons Barlean's Mango Peach Omega Swirl*

(*Vegans can choose a Vegan Barlean's Omega Swirl instead.)

2 teaspoons apple cider vinegar

1 teaspoon Ellyndale Olive Oil


1. Prepare Ellyndale Q Cup according to package directions. Allow to cool.

2. In a bowl, combine quinoa from Q Cup, kale, mango, celery, and dried cranberries.

3. Add in dressing ingredients and pecans and toss to evenly combine. Add as many or as few pecans (or seeds) as you'd like.
