Gluten-Free Pumpkin Spice Muffins

Nothing says "autumn" like a warm, spicy-sweet pumpkin muffin. Indulge in a seasonal favorite without worrying about the gluten!

Ingredients

1 Cup organic canned pumpkin

1/2 Cup milk (or milk substitute)

2 eggs

1 teaspoon Simply Organic® Pure Vanilla Extract

1 Cup Pamela's® Gluten-Free Baking and Pancake Mix

2/3 Cup Ellyndale Sugarless Sugar™

2 Tablespoons NOW® Organic Golden Flax Seed Meal

1/2 teaspoon Redmond Real Salt®

1/2 Cup NOW® Raw Pecans, chopped

1 teaspoon Frontier® Co-op Organic Ceylon Cinnamon

1/2 teaspoon Simply Organic® Ground Nutmeg

1/4 teaspoon allspice

1/2 teaspoon Frontier® Co-op Ground Ginger

Directions

  1. Preheat oven to 350° and lightly grease muffin tins.
  2. In a large bowl, mix pumpkin, milk, eggs, and vanilla extract until combined.
  3. In a separate bowl, combine Gluten-Free Baking Mix, Sugarless Sugar™, flax seed meal, salt and spices.
  4. Fold dry ingredients into the pumpkin mixture and mix into an even batter.
  5. Fold in chopped pecans.
  6. Fill muffin cups with batter.
  7. Bake for 15 to 20 minutes, or until inserted toothpick comes out clean.
  8. Serve warm and enjoy!

Tip: Prior to baking, sprinkle each muffin with streusel topping (from our gluten-free apple streusel recipe), or garnish with chopped Honey-Roasted Pecans.  Or, dust with sugar-free Confectioner's Erythritol after baking. Enjoy!
