Gluten-Free Irish Soda Bread

Celebrate St. Patrick's Day with this deliciously gluten-free Irish soda bread! Based on traditional Irish soda bread, this recipe combines the nutty taste and texture of nutritious seeds with sweet-tart dried cherries. A warm slice with a piping hot cuppa tea will have you dancing a jig in no time!

4 Cups Gluten-Free All-Purpose Flour

1/4 Cup Lactose Powder

1/4 Cup Sunflower Seeds, Roasted & Unsalted

2 Tablespoons Black Chia Seed, Organic

2 Tablespoons Golden Flax Seeds, Organic

1 teaspoon baking soda

1 teaspoon salt

2 Cups water

1/4 Cup Buttermilk Powder

1 egg

1/4 teaspoon Citric Acid

4 drops BetterStevia™ Liquid, Dark Chocolate

1/4 Cup Coconut Infusions™ Non-Dairy Butter Flavor, Organic

1 Cup dried cherries


1. Preheat oven to 375 degrees and prepare cookie sheet by lining with parchment paper.

2. In a large bowl, combine the following ingredients: flour, lactose, sunflower seeds, chia seeds, flax seeds, baking soda, and salt.

3. In a separate bowl, combine water, buttermilk powder, egg, citric acid, and dark chocolate BetterStevia liquid.

4. Add room temperature Butter-flavored coconut oil to the dry ingredients, 1 Tablespoon at a time, mixing after each addition.

5. Add cherries to dry mixture and stir to combine evenly.

6. While mixing, slowly liquid ingredients into flour mixture until a moist dough is formed.

7. On a  lightly floured surface, gently knead dough into a large, round loaf.

8. Bake on prepared cookie sheet for 50 to 55 minutes or until golden brown.

9. Allow to cool and serve with your favorite grass-fed butter (it's delicious plain too!). As they say in Ireland, "Erin go bragh!"
