Gluten-Free Gingerbread Cookies

Enjoy all of the sweetness and spice of gingerbread with none of the wheat or milk ingredients! These gluten-free gingerbread cookies use naturally butter-flavored coconut oil, pure spices, and coconut sugar. Top it with naturally sweetened, sugar-free icing for a seasonal treat you can feel good about enjoying and sharing!

2 2/3 Cup NOW® Gluten-Free All-Purpose Flour

2 teaspoons Frontier® Co-op Ground Ginger Root

1/2 teaspoon Frontier® Co-Op Organic Ceylon Cinnamon

1/2 teaspoon Simply Organic® Ground Nutmeg

1/2 teaspoon allspice

1 teaspoon baking soda

1/2 teaspoons Redmond Real Salt®

3/4 Cup Organic Coconut Infusions™ Non-Dairy Butter Flavor

1 Cup NOW® Organic Coconut Sugar

1 egg

1/4 Cup almond milk

Icing Ingredients:

1 Cup Organic Confectioner's Erythritol

3 teaspoons water

1/8 teaspoon Simply Organic® Madagascar Vanilla Extract


1. Preheat oven to 350°F. Line cookie sheet with parchment paper.

2. Combine flour, spices, baking soda and salt in a large bowl.

3. In a separate bowl, cream together coconut oil and coconut sugar.

4. While mixing, slowly add the egg and milk. Mix until fully incorporated.

5. Fold in the dry ingredients and mix until a sticky dough is formed.

6. Form the dough into a disk. Wrap in plastic and refrigerate for 30 minutes.

7. While dough is chilling, prepare icing.

8. Whisk sugar, water, and vanilla in a large bowl to form a thick paste.

9. Continue to whisk until mixture slightly lightens in color. Set aside.

10. Dust work surface with gluten-free all-purpose flour, and roll dough to 1/8" thickness.

11. Use cookie cutters to cut dough into shapes, then transfer to prepared baking sheet.

12. Bake for 8 minutes or until firm.

13. Decorate with icing and enjoy!
