Gluten-Free Apple Streusel

This gluten-free take on a fall favorite combines fresh apples, honey-roasted pecans and ginger for a wholesome and sweet treat.

4 organic green apples, sliced

1/2 Cup coconut sugar

1/4 Cup organic ginger slices, finely chopped 

1 teaspoon organic vanilla extract

1/2 teaspoon organic cinnamon

1/8 teaspoon Redmond Real Salt®

For streusel topping:

1/2 Cup gluten-free all-purpose flour

1/2 Cup organic red quinoa, cooked

1/4 Cup coconut sugar

1/4 Cup honey-roasted pecans, chopped

1/4 Cup + 2 Tablespoons butter (or Coconut Infusions™ Non-Dairy Butter Flavor, Organic)


  1. Prepare streusel topping. Combine flour, quinoa, coconut sugar and pecans. Mix in a stand mixer or pulse in a food processor until thoroughly mixed.
  2. Add butter or Coconut Infusions™ and mix or pulse until coarse. Set aside.
  3. Preheat oven to 350°.
  4. In a large bowl, combine apple slices, coconut sugar, chopped ginger, vanilla extract, cinnamon and salt. Gently toss until apple slices are coated.
  5. Place apple slices into a lightly greased 9"x 9" pan.
  6. Sprinkle streusel mixture on top to evenly coat apples.
  7. Bake 18 to 20 minutes, or until streusel topping is golden brown.
  8. Let cool 10 minutes and enjoy!
