Cinnamon-Roasted Almonds

This healthier twist on a holiday favorite combines buttery Marcona Almonds with coconut sugar and sweet spices. An easy-to-make treat, these spiced almonds are perfect for your Thanksgiving table, holiday parties, and even Christmas gifts. (Just be sure to make extra for yourself!)

Servings:  about 7


1 egg white

1 teaspoon Organic Vanilla Extract

1 3/4 Cups Marcona Almonds

1 Cup Organic Coconut Sugar

2 teaspoons Organic Ceylon Cinnamon

1 teaspoon Organic Nutmeg 

1 teaspoon Redmond Real Salt®

1 Tablespoon Almond Oil 


1. Preheat over to 275 degrees. 

2. Whisk egg white and vanilla in a bowl until light and frothy.

3. Add 3/4 Cup coconut sugar, 1 teaspoon cinnamon, 1/2 teaspoon nutmeg, and 1/2 teaspoon salt. Set remaining sugar and spices aside.

4. Fold in Marcona almonds and combine until almonds are evenly coated.

5. Spread almonds on a parchment-lined baking sheet and bake for 30 minutes.

6. Remove from oven and toss with almond oil and remaining coconut sugar, spices and salt.

7. Serve warm and enjoy, or allow to cool and package for gifts.
